Tuscany is one of the major producers of olive oil. Olive oil has become a symbol of Tuscany and is known as "liquid gold". Tuscany itself produces numerous regional oils, each with unique characteristics and levels of quality. There are countless varieties of olive trees throughout Tuscany and Italy, the most common being frantoio, leccino, moraiolo, and divastro.
Brucatura
In Tuscany, the olives are hand-picked while still attached to the branches of the tree and before reaching complete ripeness. This process, know as "brucatura," usually lasts from mid-November to mid-December.
